The idle drops because the charging system is working harder to replace the juice the fan is using. When a battery starts dyeing this gets a little more noticeable. Bad battery connections can cause this also. As for cranking without the choke as long as you are not fouling plugs let her run.

Is the carb on an 06 4x4 500 adjustable?
I keep setting idle speed, but it drops from 1300 to 950 when the fan kicks on.
Also, it will crank right up without any choke. This makes me think it's running a little rich.
